The 4th has always been one of my favorite holidays since I was kid. Nothing better than grilling out with friends & fam, lighting sparklers, watching fireworks & celebrating our freedom.
I love love love hosting so I’m excited to make these yummy dishes for our friends on the island 🙂

Pineapple Fruit Bowls

So simple to make a few of these boats for guests to munch on while you fire up the grill!
Huli-Huli Chicken Kabobs
Huli-huli chicken is a Hawaiian dish where the chicken is cooked over mesquite wood & basted with a huli-huli sauce!
It’s yummy, sub tofu if you’re a veggie head like me 😉 We’ll be marinading the chicken & tofu in this recipe & basting it over the grill to get a good flavor!
2 lb chicken breast cut into 2″ cubes (sub tofu if needed)
1 c light brown sugar
3/4 c no sugar added ketchup
3/4 c reduced sodium soy sauce
1/3 c Dole pineapple juice
1 tsp ground ginger
2 tsp garlic powder
2 red onion
3 bell peppers
10 wooden skewers
1.) Mix all ingredients except for chicken & veggies in a large bowl to make a marinade, reserve 1/3c for basting.
2.) Put cubed chicken into the marinade, cover & refrigerate for 1 hour.
3.) Once chicken has 20 minutes left to marinate, put your skewers in water to soak (this prevents them from burning on the grill)
4.) Cut your onion, pineapple & bell peppers into 2″ chunks.
5.) Time to skewer! Start with chicken on your skewer, then add onion, pineapple, bell pepper & chicken again. I recommend doing it in this order, the pineapple will cause the chicken to be a little soggy since it’s juicy so you want to keep it between 2 veggies 🙂
6.) Put each skewer on the grill on medium heat for 10-12 minutes or until the chicken reaches 170º. Baste the chicken & veggies with remaining sauce when you have 5 minutes left of cooking time!
Flag Fruit Pizza
1 can Pillsbury Crescent seamless dough
1 1/2 c vanilla greek yogurt
1/2 c sugar
Strawberries, blueberries and a banana
1.) Preheat oven to 375 degrees.
2.) Lay out the Pillsbury dough on a greased baking sheet. Shape into a rectangle & bake 15 to 20 minutes or until golden brown.
3.) Let the crust cool to room temperature.
4. In a bowl, mix the greek yogurt & sugar then spread over the crust, to the edges.
5.) Using the blueberries, make a border around the crust, then fill in the top left quadrant to make the “stars” of the flag.
6) Make layers of thinly sliced strawberries and bananas for the stripes.
